Apple taste is mostly related to the balance between sugars and acids. Sweetness in apples is caused by three sugars: sucrose, glucose, and fructose. In most cases 50% of the sugar is fructose. Malic acid (and citric acid in some cultivars) contributes to sourness and acidity.
